Just to entertain children at home during their Christmas holidays I tried making a pizza at home. To our surprise it  came out well!!

Pizza Base (makes 1 base)

strong flour/bread flour – 175g

Dried Yeast – 1 tsp

water – 90ml

sugar – 1/2 tps

olive oil – 1tbsp

1)Sprinke the yeast on water and add sugar and mix it thoroughly and leave it aside for 15 mins.

2)Add salt to flour and then the water with yeast and make a dough (slighly watery than a chappathi dough). Then add the olive and make a smooth dough.

3)Cover the dough in a cling film and leave it in warm place (airing cup board or oven) for an hour or until it doubles in volume. Best taste could be achieved if the dough is allowed to double in room temperature but this would take a long time.

4)Once doubled in volume knead the dough to bring out all the air bubbles and place it on a surface with flour and spread it with a rolling pin or with hands to a 1 cm thick layer. Now the base is ready.

Pizza Sauce

chopped can tomatoes – 1/2 can

garlic – 1 clove

finely chopped onion – 1 small

mixed herbs – 1/2 tsp

oilive oil – 1tsp

1)Place a pan on a hob add oil and then chopped garlic and onions and saute for 2 min. Then add tomatoes and herbs and leave it in sim for 15 mins until the water evaporates and mixture is in thick consistency. Or alternatively could use tomatoe puree. Allow it to cool.

1)Place the pizza sauce on the base and spread it evently.

2)place a layer of cheese. Ideally more than one cheese type would be good.  Mozarella, feta and cheddar are worth trying.

3)Place your topping on the the cheese layer. Dont go for more than 2 or 3 topping per pizza. Cook your toppings if they would take longer. Then add another layer of cheese and spread it evenly.

Leave the pizza on a baking tray. Place a bit of flour on the tray before placing the pizza. Heat the over to 220C. And place the pizza at the top shelf. Anything lower than the middle is not good for Pizza. Bake for 20 min.
